Delicious Chocolate Pie:

for the crust:

1 3/4 c dates (if the dates are not REALLY soft already, put them in a small glass bowl and pour boiling water to cover, let soak 5 min, then drain off water and use either for your personal drinking pleasure or for a bread recipe)

1 1/2 c shredded coconut

3 T. cocoa powder

3 T. flax seeds

Simply place all of these in the bowl of your mini food processor and blend until the mixture forms a paste.  (Trust me, this works.  It is very sticky, though, so line your pie plate with waxed paper or parchment paper.)

for the filling:

1 1/2 c almond milk

8 oz. dark chocolate morsels

4 T. cornstarch

2 T. vanilla

1 envelope unflavored gelatin, slowly dissolved in 1/4 c. cold water, stirred well

 

Combine these ingredients in a small saucepan and stir constantly over low to medium heat, watching as the mixture thickens (after five minutes, it will begin to thicken.)  Wait and stir until bubbles form while stirring, then remove from heat, cool slightly, and pour into prepared pie plate with mixture above patted into shape as a crust over wax paper.

Refrigerate until firm. (several hours to overnight.  Or you can speed the process up to one hour by placing pie in the freezer.  Just make sure that the pie plate is sufficiently cool enough not to break the glass by the rapid change in temperature!!)
