Delicious Chocolate Pie:<\/strong><\/span><\/p>\n

for the crust:<\/em><\/p>\n

1 3\/4 c dates (if the dates are not REALLY soft already, put them in a small glass bowl and pour boiling water to cover, let soak 5 min, then drain off water and use either for your personal drinking pleasure or for a bread recipe)<\/p>\n

1 1\/2 c shredded coconut<\/p>\n

3 T. cocoa powder<\/p>\n

3 T. flax seeds<\/p>\n

Simply place all of these in the bowl of your mini food processor and blend until the mixture forms a paste. \u00a0(Trust me, this works. \u00a0It is very sticky, though, so line your pie plate with waxed paper or parchment paper.)<\/p>\n

for the filling:<\/em><\/p>\n

1 1\/2 c almond milk<\/p>\n

8 oz. dark chocolate morsels<\/p>\n

4 T. cornstarch<\/p>\n

2 T. vanilla<\/p>\n

1 envelope unflavored gelatin, slowly dissolved in 1\/4 c. cold water, stirred well<\/p>\n

 <\/p>\n

Combine these ingredients in a small saucepan and stir constantly over low to medium heat, watching as the mixture thickens (after five minutes, it will begin to thicken.) \u00a0Wait and stir until bubbles form while stirring, then remove from heat, cool slightly, and pour into prepared pie plate with mixture above patted into shape as a crust over wax paper.<\/p>\n

Refrigerate until firm. (several hours to overnight. \u00a0Or you can speed the process up to one hour by placing pie in the freezer. \u00a0Just make sure that the pie plate is sufficiently cool enough not to break the glass by the rapid change in temperature!!)<\/p>\n

This delectable dessert is so, so good for you, that your family will never guess how many nutrients they are imbibing with a single slice of the lush, chocolaty goodness.<\/p>\n
