Shepherd’s Pie–the definition of comfort food!!<\/span><\/strong><\/h2>\n

This is an easy one-dish meal, and one of the best casserole recipes for nourishing a hard-working family. \u00a0The vegetables and meats can be interchanged or varied. \u00a0However, we thought my impromptu\u00a0version was scrumptious!! \u00a0The creamy sweetness of the corn made it divinely melt-in-your-mouth good. \u00a0It is a nutritious meal and a good way to give your loved ones a warm, hearty hug-in-a-dish. \u00a0Smile.<\/p>\n

saute in 2 T. olive oil:<\/em><\/span><\/p>\n

1 small onion, chopped<\/p>\n

4 carrots, diced<\/p>\n

when tender, add;<\/em><\/span><\/p>\n

2 ears of cooked corn’s worth of kernels, sliced carefully from the cobb<\/p>\n

3 c. small fresh broccoli flowerets<\/p>\n

Cover and steam on mid-to-low heat for 15 minutes, or until just tender.<\/span><\/p>\n

 <\/p>\n

Meanwhile, very generously butter a deep dish pie plate, preferably 13″ in diameter or larger. \u00a0Generously distribute flour over the bottom of the dish and shake it back and forth to coat.<\/p>\n

layer in bottom of pie plate:<\/em><\/span><\/p>\n

2 c. shredded cooked chicken (you can substitute ground beef or turkey, or even garbanzo beans, etc)<\/p>\n

top with cooked vegetable mixture.<\/span><\/p>\n

pour over everything:<\/span><\/p>\n

16 oz. can clam chowder or potato soup (ready-to-eat)<\/p>\n

2 c. water, rinsed in the can<\/p>\n

Cut into quarters and arrange artfully over the top, pressing down slightly into sauce:<\/span><\/p>\n

10 homemade buttermilk biscuits (see recipe below)<\/p>\n

 <\/p>\n

Cut slivers of butter and place a thin slice of butter on top of each biscuit quarter.<\/p>\n

Bake at 350 degrees Fahrenheit for 30-45 minutes or just lightly browned.<\/p>\n

Yum!!<\/p>\n

Homemade Buttermilk Biscuits:<\/span><\/h2>\n

stir together with wire whisk:<\/em><\/span><\/p>\n

2 c. flour (preferably whole wheat pastry flour, or good gluten-free flour)<\/p>\n

1 T. baking powder<\/p>\n

pinch of salt<\/p>\n

add:<\/em><\/span><\/p>\n

1 1\/2 c. buttermilk or sour milk (if you need to, add a t. of vinegar to some milk)<\/p>\n

 <\/p>\n

Stir together until it forms a ball. \u00a0If necessary, depending upon the type of flour that you used, add 1\/4 c. olive oil to help it stick together (but not to you!) \u00a0Knead it a few times with your hands, and then roll out to 1 inch thickness. \u00a0Cut biscuits with a small round glass. \u00a0Bake at 375 degrees Fahrenheit for 15-18 minutes or until lightly browned.<\/p>\n
