These luscious cookies taste like they are straight out of a gourmet shop cellophane: however, they’re good for you (shh….don’t tell!!) Also, they are easily made in half an hour. What more could you ask for?
Decadent dark chocolate cookies
(I used very dark baking chocolate bars for this, 85% cacao, and everyone loved them. However, if you are concerned about the bitterness, you could use 75% cacao. Personally, I enjoy eating straight bitter baking chocolate with honey drizzled on top, and it is very good for you!! Just don’t do that before bedtime, because you won’t be able to sleep for a long time afterwards. Trust me. Smile.)
in a large mixing bowl, stir together with a wire whisk:
4 c. whole wheat flour (yes, you heard me. don’t worry!! it will taste great!!)
1/2 c. cocoa powder
2 t. baking soda
pinch salt
1 1/2 c. brown sugar or organic raw sugar
4 oz. dark chocolate, shaved (i chopped mine diagonally with a large knife)
pour into center of bowl:
1 1/2 c. olive oil or vegetable oil
3/4 c. maple syrup or honey
2 eggs
1 T. vanilla
Mix well with a strong large spoon, until thoroughly combined into a soft dough. Drop from tablespoon onto cookie sheet 2″ apart. Using a soup bowl with approximately 1/2 cup of raw sugar in it, dip the bottom of a flat bowl or cup into the sugar and press each cookie to flatten it, dipping the bowl in sugar each time (to prevent sticking, and to give the cookies a delicious crust.)
Bake at 375 degrees Fahrenheit for 15-20 minutes, or until just firm on top. DO NOT OVERBAKE. They will grow firm as they cool.
